Mango Chicken and Fresh Spring Rolls



Asian cooking is extremely versatile and generally healthy.  In this post you will find a mix between Caribbean, Vietnamese, and Southeast Asian cooking.  

Last weekend, I spent some much needed time with my mom and aunt.  It's typical for our visits to include something with food or cooking.  We decided to spend the afternoon in an attempt to make fresh Vietnamese spring rolls that would be later served for dinner.  Lady time with a little champagne and cooking definitely makes for a great afternoon.  Laughter with family in the kitchen makes for great memories.


Servings:  5 - 6
Time:  4 hours in slow cooker 

Chicken and Mango with Ginger-Curry Topping
Recipe from Healthy Crockery Cookery by, Mable Hoffman (1998)

Mango Chicken:
- 1 or 2 large ripe mango's
- 2 tsp fresh lemon juice
- 1 tsp honey
- 1 clove garlic, minced
- 1/8 tsp paprika
- 2.5 to 3 lbs chicken pieces (your choice on the cut)
- Salt and Pepper

Ginger-Curry Topping:
- 1/3 cup plain low-fat yogurt
- 1/2 tsp curry powder 
- 1/4 tsp ginger root
- 1 tsp brown sugar
- 1/2 tsp orange zest (or grated orange peel)
- Salt and pepper to taste

Peel mango's and dice into small pieces.  Put the mango in a bowl.  Stir in lemon juice, honey, garlic, paprika, salt and pepper.  Rinse chicken and pat dry.  Place in the slow cooker.  Add the mango mixture.  Cover and cook on LOW for about 4 hours or until chicken is done and tender.

While the chicken is cooking make the topping (I suggest making this right around the 4 hour mark). Combine yogurt, curry, ginger root, brown sugar, and orange peel.  Stir and taste.  Add salt and pepper and continue to taste to your liking.   Refrigerate. 

To serve, place chicken on a serving plate and spoon the mango drippings over the top.  Serve the topping on the side or over the top of chicken depending on your preference. 

The chicken is slowly roasted and should easily pull apart into shredded pieces.  As a leftover or main course, the chicken can be shredded and the served over the top of jasmine rice.  For a little heat, add a couple pinches of Cayenne pepper to the topping.


Servings:  6 - 8
Prep time:  20 -25 minutes

Vietnamese Fresh Spring Rolls
Based on a similar recipe from AllRecipes.com

Spring Rolls:
- 2 oz of rice vermicelli (about half the package)
- 8 to 10 rice wrappers (7 or 8.5 inch diameter)
- 1/4 cup fresh cilantro
- 1/4 cup fresh Thai basil
- 1/2 cup shredded carrot
- 1/2 cup shredded daikon
- 2 or 3 leaves of shredded lettuce

Dipping Sauce:
- 2 TBSP hoisin sauce
- 1 TBSP sesame oil
- 1 TBSP salted peanuts, chopped
- Salt and pepper

Boil the rice vermicelli in a shallow pan for 3 to 5 minutes.  While the water is boiling, rinse and dry the cilantro and basil (do not cut).  Rinse and shred the lettuce, carrot and daikon.  Drain the vermicelli, rinse and let it sit.  

Use a large bowl or the shallow pan to wet the rice paper.  Dip the rice paper into warm water.  Flip and carefully remove from the water after it softens.  Lay flat on a cutting board.  Place rice vermicelli on the wet rice paper - you want to place it close to one side and the vermicelli should be about the width of 2 fingers.  Layer on the carrots, lettuce, daikon, cilantro and basil.  Tuck in the 2 ends and roll carefully toward the open end.  Repeat until vegetables are gone. To make the dipping sauce, simply combine the hoisin sauce, sesame oil and peanuts into a small bowl.  Peanuts should be finally chopped.  If you are allergic to peanuts or don't like them... try sesame seeds or cashews instead.



These are not your typical spring rolls and you won't find anything like this in the frozen food aisle at your grocery store.  This was our first time making spring rolls and definitely something that we plan to do again.

A meal like this would be perfect for a Saturday or Sunday evening at home.  Serve with chilled glass of plum or Moscato wine.

Meatless Monday - Thai Curry Rice

Meatless Monday


If you are anything like me, Monday's are one of the most hectic days of week.  Usually I will forget to thaw some kind of meat, the phone doesn't stop ringing and dinner is the last thing on my mind.  This is how Meatless Monday's got started in my house.

This post will share an easy recipe for Meatless Monday and some quick fix tips to make your dinner time a little easier.  If you are not a fan of yellow curry recipes please read on... I have substitute suggestions below.


Easy Dinner Tip 1:  Wal-Mart grocery has pre-packaged stir fry vegetables in the produce section.  The bag is mixed with carrots, peapods, broccoli and bean sprouts.  Other grocery stores may carry something similar.  It saves me from the hassle of cutting individual vegetables and having too many left over.  Just rinse and combine with the dish.  It cuts your prep time in half.

Easy Dinner Tip 2:  If you prefer to use vegetables that have not been pre-packaged that's okay.  Wash and cut the vegetables ahead of time.  I've found the best time for me to do that is right after I get home from the grocery store or market.


Prep time = 10 minutes
Cook time = 15 minutes

Thai Curry Rice
- 2 cups of Jasmine rice
- 3 1/2 cups of water
- 1 bag of fresh stir-fry veggies (or what ever you prefer)
- 1/2 medium onion, sliced
- 1/2 TBSP cumin
- 1/2 TBSP turmeric
- 1 3/4 TBSP yellow curry
- 2 TBSP sesame oil
- 1/2 TBSP honey
- (Optional) Crushed red pepper OR Hot sesame oil
- Salt and pepper

In a medium sauce pan, bring the rice and water to a rolling boil.  Reduce heat to low and cover.  Set aside after all the water is absorbed and the rice is no longer crunchy.  In a wok or large skillet, add the sesame oil over a medium-high heat and let it warm for 1 or 2 minutes.  Add the onion with salt and pepper.  Add the stir-fry veggies and honey.  Heat thoroughly and add the rice.  Combine the ingredients.  Then add the additional spices; cumin, turmeric, curry and optional spices.  Heat through for 3 minutes.  Remove from heat and serve.

I also added half a bag of frozen peas for extra texture and flavor.  It was probably one of the easiest dishes that I made all week.  Plus, my husband was very pleased with his dinner.  An easy side dish could be a salad or store bought egg rolls.

If you are not a fan of yellow curry you can substitute it with a Chinese Five Spice instead.

Taste of Thai - A Local Favorite


Have you ever avoided a restaurant just because the exterior was not appealing to the eye?  When I worked downtown Appleton, I passed a restaurant every day on my morning and afternoon commute.  I absolutely love Thai food but this particular building did not appear to be inviting.

Several friends and colleagues have praised this restaurant and their delicious entrees.  One evening we decided to give it a try. 

Taste of Thai is located downtown Appleton, near the Lawrence University campus.  After experiencing incredible Thai food while visiting Plover (read that review here), my standards were set fairly high. 

The interior reminded me of the restaurant scene from the movie "The Sweetest Thing".  It is your typical Asian restaurant with a full-service bar.  You can also place orders for pick up.  My only criticism would be the awkward chairs that restrict your arm motions; which is kind of important while dining.

We started the meal with "Fresh Salad Rolls" served with a peanut dipping sauce.  It was amazing.  The crunchy texture paired very well with the sweet and salty sauce. 

Our server was extremely prompt, reactive and aware.  I asked her for an entree recommendation.  She suggested the "Volcano Chicken" which is the most popular item on the menu.  The server also explained that orders can be created on a spicy scale; 1 is not very spicy and 5 is the spiciest possible.  I took her suggestion and ordered a level 3.  Next time, I will order at level 4.

I would give Taste of Thai an overall score of 8 (out of 10) on my scale.  If you are looking for authentic ethnic food... check out Taste of Thai.  The service is outstanding and the food is exceptional in flavor.

Flashback Friday - Thai This

Flashback Friday



In college and while I was first living on my own, Thai rice became a staple in my diet.  It was quick, cheap and easy.  My love for this salty, sweet and spicy meal has continued into my late 20's and even my husband enjoys it now.  This recipe is also a family favorite... my Mom and sister, Megan, will often request this if I offer to make them dinner.

I shared my recipe late last summer and gave some tips on delicious sauce options.  This recipe is perfect for any single people or anyone living alone.  It can also feed up to 4 people and the leftovers aren't too shabby either.

It's not fancy and it's certainly not expensive to create.  You can pick your favorite vegetables or meat to mix with the rice.  The given recipe is definitely not the one and only way to make this dish.  So if you are a fan of pineapple, cilantro or water chestnuts... feel free to incorporate those to your liking.

The Best Thai Food I Ever Ate - "Samoeun's Happy Wok"

While taking a short weekend trip to Plover we found ourselves lost with no direction toward a delicious and much-needed dinner.  "Urban Spoon," my husband says with excitement.  He opens the app and begins searching through the categories... Caribbean, Mexican, Japanese.  We landed on "Thai" and a restaurant with a very good review!  Urban Spoon gave it 5 stars... probably worth checking out!

Tip: If you do not have Urban Spoon on your smart phone, I suggest downloading that right away.
It really comes in handy when you are visiting another city and would prefer to visit something other than the predictable "Chili's" or "Famous Dave's".  Urban Spoon is for the open-minded.
 

The app took us to "Samoeun's Happy Wok" in Plover, WI.  The outside looks small and possibly like an old cell phone store.  But the inside is intimate and well decorated. 

We did not see any alcoholic beverages listed on the menu; which was fine since we were there only for the food.  The waitress was prompt and helpful in answering any food questions.  I'll tell you one thing... it's good that we arrived hungry!

Appetizer: Vegetable Spring Roll with
Peanut Dipping Sauce

WOW!  The appetizer came out swinging at our taste buds.  This was without a doubt the freshest and most flavorful spring roll that I've ever eaten.  It was rolled with your typical spring roll ingredients; noodles, bean sprouts, lettuce and cilantro.  The dipping sauce was so unique and not easily identifiable.  According to my husband, "You must figure out how to make that!" Yes, it was pretty good.

2nd Appetizer: Crab Rangoon

The waitress appeared with an unexpected appetizer.  Apparently meals are served with 2 crab rangoon and a fortune cookie.  We were pleasantly surprised as we bit into the first rangoon with complimentary dipping sauce.  Again this was probably the freshest and most flavorful crab rangoon I've ever eaten.  The cream cheese filling was warm and just melted with every bite.  There were spring onions and small hints of crab inside.  The dipping sauce is a mixture of honey and ginger.

My meal was outstanding!  The red curry sauce was very well balanced in spice and sweetness.  Even Jon, who does not handle spice very well, said that the spiciness was complimented well with the sweetness.  I detected a hint of coconut in the sauce.  The vegetables were fresh and still a little crunchy.  My only criticism would be to add more shrimp.

If this restaurant were to jack up their prices by another $3 - 5... it would be justifiable and I would not even complain about the the prices.  Everything was completely fresh and each dish was very well executed.  You can tell the the chef prides herself on making the finest foods for their customers. 

We asked if they had a website yet and informed the waitress that I would be writing a review about the restaurant.  They are in the process of working the website right now.  You can, however, find them on Google and Urban Spoon if you decide to visit Plover any time in the near future.

HIGHLY recommend it.  I just wish we had this exceptional, great restaurant closer to home.
